Meet the Chef: Alexia Gawlak

Chef, mom, and Chicago native, Swine & Sons owner, Alexia has been a part of the Orlando culinary community for over two decades.

Alexia’s culinary career began in Orlando where she worked her way up in restaurants before attending Culinary Institute of America in Hyde Park and eventually headed back down to Florida. From NYC’s Nobu to Winter Park’s Luma on Park and The Ravenous Pig, Alexia has worked alongside some of the most prominent culinary talent in New York, Orlando, and Winter Park before opening Swine & Sons in 2015.

In 2020, Alexia appeared (and won) on an episode of Guys’ Grocery Games putting the Swine & Sons Hot Chicken sandwich on the map. Just a few years later, Swine & Sons was recognized by the Michelin Guide in 2022 and 2023 as a Michelin Bib Gourmand award winner. What started as a provisions market & craft butcher has transformed into a locally loved and nationally recognized restaurant and caterer making Southern-inspired smashburgers, sammies and salads.
